Instant Pot NM Pinto Beans

Ingredients (Servings: 10-12)

  • 1 pound New Mexican pinto beans
  • 6 cups chicken broth or vegetable broth
  • 3 Tbsp. Onion, Dehydrated, Minced
  • 2 California bay leaves
  • 2 Tbsp. Mesa Southwest Adobo seasoning
  • 1 tsp. Kosher salt

Steps

  • Rinse beans and pick out any debris. There is no need to soak!
  • Add ingredients to your Instant Pot or like appliance. Secure the lid, and turn the valve to SEAL.
  • Set to PRESSURE COOK on high pressure for 50 minutes for dry beans and 15 minutes for soaked beans.
  • After 50 minutes, let the pressure naturally release for 15 minutes.
  • Remove lid and enjoy!
