New Mexican Bizcochitos
Ingredients (Servings: Servings depend on cookie size)
1 cup lard, butter, or vegetable shortening
1 cup sugar
2 eggs
1 tsp. Mexican Vanilla Extract
¼ cup whiskey
4 cups all-purpose flour
2 tsp. baking powder
½ tsp. salt
½ cup New Mexican Bizcochito Spice
Steps
Preheat oven to 375 degrees.
Line a baking sheet with parchment paper.
Cream the fat of choice and sugar with an electric beater. Beat in eggs, Mexican Vanilla Extract, and whiskey.
In a separate bowl, sift together flour, baking powder, and salt. Slowly add the flour mixture into the egg mixture, and combine until it forms a stiff dough.
Roll out dough on a floured surface to ¼ inch thick. Cut out cookies to desired shape.
Dunk the cookies in the New Mexican Bizcochito Spice.
Place on prepared cookie sheet. Bake until lightly browned (10-14 minutes- depending on altitude). Cool on wire rack.
